RATATOUILLE MOROCCAN STYLE

As part of the Mediterranean Diet, Moroccan Cuisine has its own twist of the now so famous Ratatouille, it is called ZAALOUK and it is Devine!

Start by removing 3 to 4 vertical strips of the skin from each aubergine.  Cut the aubergines in large cubes and discard the stripes.

Heat the olive oil on a pan and add all the ingredients. Cover on medium heat and cook for about 25 mins or until the vegetables are soft. Stir occasionally.

After 25 mins, mash the vegetables in the pan and cook for an extra 5 to 10 mins or until the liquid evaporates.

Add the Preserved Lemon on top (optional) and voilà! You can serve the ZAALOUK warm or cold as a side dish or as a dip. Bon appétit!
